Red rice with vegetable and scallops

300 g Denota red rice
2 courgettes
3 slices pumpkin
1/2 leek
1 red pepper
12 scallops
Salt, pepper
Extra virgin olive oil
White wine

Cook the rice in plenty of salted water for about 30-35 minutes.
In the meantime, dice the vegetables and cook them for 10-15 minutes in a pan where you will have heated the oil and browned the leek. Add salt and pepper. Drain the rice and add it to the vegetables.
Clean the scallops and cook them in a pan for 2 minutes on each side, adding white wine until evaporated.
Serve the rice with the scallops.
